Nestled in the village of Damery just west of Epernay, the Goutorbe-Bouillot house stands as a testament to small-grower Champagne excellence. Since its establishment in 1911, this family-owned estate has meticulously cultivated 8 hectares, comprising 30 distinct vineyard parcels that stretch across the Vallée de la Marne. Focusing on Pinot Meunier, Chardonnay, and Pinot Noir grapes, the union of Jules Goutorbe and Louise Bouillot gave rise to the esteemed Champagne GOUTORBE-BOUILLOT.
The vineyard parcels boast an average age of approximately 35 years, with some dating back to 1930, nearly a century old. Demonstrating a steadfast commitment to vine health and wine quality, Goutorbe-Bouillot proudly holds certification as "viticulture durable," the pinnacle of European sustainable agriculture standards.
Employing a method akin to the Solera system, Goutorbe-Bouillot Champagnes reflect a unique approach. Each year, 50% of the reserve wine is incorporated into the blend, ensuring a harmonious combination of earlier vintages in diminishing proportions. This perpetual reserve, initiated in 1980 for the Carte d'Or and in 2000 for other non-vintage cuvées, imparts maturity and complexity to the wines.
To preserve natural acidity and grape aromas, the house prevents malolactic fermentation, resulting in wines that exhibit freshness in their youth while gaining complexity with age. The aging process involves a commendable 36 months on the lees, further contributing to the refinement and character of Goutorbe-Bouillot Champagnes.
